Abalone with dry Gewurztraminer reduction



Recipe for Abalone with a Dry Gewurztraminer sauce

 

12 small abalone from Monterey Abalone Company

¼ cup chopped onion

1 teaspoon minced garlic

Sprinkle of Lemon Pepper

3 Pinches of Sea salt or kosher

3 tablespoon of Olive oil

Lemon

 

Sauce:

2-3 tablespoon of Butter

1 cup of Otter Cove Dry Gewurztraminer

Sprinkle black pepper

1 teaspoon minced garlic

Parsley flakes

2 pinches of Salt

Olive oil or sesame oil

 

Clean and tenderize the abalone.

Spread olive oil in a large pan, pan sear the abalone, about 4 minutes stirring occasionally on medium heat. Add garlic, onion and lemon pepper.  Add sea salt.  Cook for another 3-5 minutes stirring occasionally.

 

 

Sauce:  Melt butter over medium heat then add garlic, parsley, and black pepper in a small sauce pan.  Let simmer for couple minutes then add in the Gewurztraminer and a tablespoon of olive/sesame oil.  Let it reduce over med/low heat, stirring occasionally, and then add salt; this could take 5-7 minutes.  Put the sauce over the abalone, squeeze a little lemon and you’re ready to go.

 

You can serve this with rice or risotto and add vegetables to taste...  And enjoy the rest of the bottle of Otter Cove Gewurztraminer…

 

 

It’s simple, healthy, and refreshing.
